Use per dozen when every cookie is the same simple design. Use per cookie when names, many colors or hand painting make each piece a small commission.
A common split: $36–$60 a dozen for simple flood work, $5–$8 each for moderate custom, $8–$15+ each for intricate. The spread is labor, not butter.

Costs bakers forget
